Cinnamon Apple Granola Muffins

Ingredients:
- 1 flax egg (1 tbsp ground flax + 2.5 tbsp water)
- 1 ripe banana
- 2 tbsp creamy unsalted almond butter (only ingredients should be almonds)
- 1/2 cup coconut sugar
- 3 tbsp coconut oil, melted and cooled
- 1/2 tsp Himalayan salt
- 1/2 tsp cinnamon
- 1 cup almond milk
- 1 tsp vanilla
- 1 1/4 cup Bob’s Red Mill 1:1 Gluten Free Baking Flour
- 1 1/4 cup oat flour (I used Bob’s Red Mill GF Oats blended up)
- 1/2 cup rolled oats
Granola topping:
- 1/2 cup rolled oats
- 1/2 tbsp coconut oil
- 1 tsp coconut sugar
- 1 tsp cinnnanom
- 1 tsp chia seeds
Cinnamon apples:
-1 organic honey crisp apple
-1 tsp cinnanom
-1 tbsp water, plus more if needed
Directions:
1. Preheat oven to 375 F
2. First create your flax egg and whisk together. Let stand for 5 minutes to set.
3. Next bring a pan to medium heat on the stove. Wash throughly, then chop your apple into tiny pieces. Place water, apple chunks, and cinnamon in pan and heat until soft. Remove from heat and cool.
4. Remove peel from banana, then mash until smooth.
5. Add in coconut oil, almond butter, and vanilla next. Stir until completely combined.
6. Next add in almond milk, cinnamon, and coconut sugar. Once that is combined, add in everything else.
7. Stir until thick batter is formed.
8. Spray muffin tins with cooking spray or line with muffin cups.
9. Scoop out batter filling all the way up.
10. Create your granola topping then pile on the granola on each muffin. Make sure to press down to ensure the granola will stay on.
11. Bake for 30-35 minutes for until nice and golden.
12. Serve warmed up with your favorite nut butter and some organic raw honey!
This recipe will make about 12 standard sized muffins.
If you’re also wondering where the baking powder and baking soda is, I actually completely forgot. I made these early one morning and I realized I forgot these baking agents when the muffins were already in the oven. To my surprise they turned out just fine! Truly they are some whole food plant based muffins! ;)
