Cinnamon Sugar Bites


By now, if you’ve been reading my blog you know how big my sweet tooth is. I’ve gotten a lot better by controlling my cravings, but sometimes a girl just finds herself getting a vegan donut. Funny thing is, since I’ve been on this clean eating and whole food diet I constantly crave SUGAR. Remember those Lil Debbie’s cakes? For some reason I want

those constantly, and I know for a matter of fact those don’t come in a vegan version. 

One of my favorite snacks to have is Lara Bars. Have you checked out those ingredients? So clean and so pure, it seems like you can easily recreate it. And I have! Well I took inspiration from it and gave it my own lil twist. 




These bites turned out to be the prefect treat! Tasting exactly like a snickerdoodle cookie, you kind of forget that you’re eating something that is actually really good for you. 


One thing that took this recipe to the next level was making my own nut butter. Ever since getting a food processor, I feel like I use it on the daily for everything. It seems like a lot of steps making your own, but give yourself 15 minutes and you got yourself some fresh, homemade nut butter.


 


Cashew Pecan Butter


Ingredients: 


1/2 cup cashew 

1/2 cup pecans 

Pinch Himalayan salt 


Directions: 

  1. Combine everything in food processor. 

  2. Process on high for 3-5 minutes, stop scrape down the sides and repeat until combined and smooth


Servings: 12

Vegan, Gluten Free, and Raw

Prep time: 5 minutes Total time: 40 minutes


Cinnamon Sugar Balls 


15-20 dates 

1/2 cup cashews

1/2 cup pecans

1 1/2 tsp Cinnamon 

1 1/2 tsp coconut sugar 

1/2 cup nut butter 


Directions: 

  1. Place all ingredients in food processor 

  2. Pulse until everything is combined 

  3. Dump dough into bowl and let chill in refrigerator for 15 minutes 

  4. Once chilled, start forming balls 

  5. Combine 1 tbsp coconut sugar and 1/2 tbsp cinnamon into small bowl, roll balls in sugar mixture

  6. Place onto baking sheet and put into freezer for about 10 minutes to set

  7. Once done place in air tight container in fridge
