Golden Milk Pumpkin Bars

It’s officially the best time of the year: PUMPKIN SPICE SEASON! Call me basic all you want, I don’t care, but I live for this time of year. Fall is my favorite season, the change in the leaves, (well the somewhat change I see in my Orange County community) the crisp air in the mornings, and even the smell of nature around us changes. Also Halloween! The best and my favorite holiday to celebrate. Not going to lie but I definitely celebrate this holiday year around. Catch me watching Hocus Pocus in February!
To start off this magical season I whipped up some Golden Milk Pumpkin Bars! The first time I made these they were not good whatsoever, but I made them again and they turned out a thousand times better! So here is the recipe I have been promising! What a better way to start off this season, am I right?! I hope you like pumpkin because I have so much more in store!

Vegan and Gluten Free

Prep time: 10 minutes Total time: about 50 minutes
Filling:
1 can organic pumpkin
½ golden milk
1 tsp cinnamon
½ tsp nutmeg
¼ tsp allspice
¼ cup pure maple syrup
Crust:
1 ½ cup oat flour
⅓ cup coconut flour or almond flour
2 tbsp ground flax seed
¾ cup unsweetened applesauce
¼ tsp salt
1 tbsp coconut sugar
1 tsp aluminum free baking powder
Topping:
¼ cup rolled oats
½ tbsp coconut sugar
Directions:
Preheat oven to 350 F
First make golden milk: blend together ½ water with about ¼ cup unsweetened coconut flakes for about 1-2 minutes. Strain to remove pulp. Add coconut milk to saucepan and bring heat to medium. Add in ½ tsp turmeric, ⅛ tsp ginger, and ½ tsp cinnamon. Heat for about 2 minutes for flavors to combine.
Add other filling ingredients to golden milk and stir to combine.
For crust: either in food processor or by spoon, add all ingredients and pulse/stir until dough forms
Line a loaf pan with parchment paper
Press half of the dough into bottom, I find it best to use my knuckles to do this.
Add in filling, then crumble rest of crust on top.
Stir together topping mixture, then sprinkle on top.
Bake in heated oven for 35-40 minutes.
Once done, let cool then set in fridge for flavors to build.
These yummy bars will last about 5-7 days in the fridge!
