Hawaiian Veggie Burgers

Yield: about 10 medium patties

Vegan and Gluten Free

Category: Veggie Burgers

Prep time: 20 minutes Total time: about 40 minutes


Ingredients:

  • 1 block tempeh ( I used Trader Joe's)

  • 1/2 red onion

  • 1 1/2 cups mushrooms

  • 1 jalapeño

  • 1/2 cup chopped pineapple

  • 3 tbsp cilantro

  • 1 red bell pepper

  • 2 cups oat flour (Coach’s Oats blended up)

  • 2 flax eggs (2 tbsp ground flax + 5 tbsp water)

  • 1/4 cup coconut aminos

  • 1 tsp garlic powder

  • 1/2 tsp Himalayan salt

  • 1 tsp pepper

  • 1/2 tsp cumin

  • 1 tsp red pepper flakes

Directions:

  1. Heat grill or preheat oven to 375 F

  2. First sauté mushrooms in avocado oil

  3. Rough chop veggies and tempeh add to food processor

  4. Add other ingredients bedsides oat flour and flax egg

  5. Pulse until combined (do not form paste)

  6. Add in oat flour pulse a couple times

  7. Add in flax egg pulse a couple times

  8. Remove blade from processor. Form patties to desired thickens and lay flat on parchment lined baking sheet. If baking: place in over right away and cook for 15-20 minutes, flip and cook for an additional 15-20 minutes. If grilling: place on heated and greased grill and cook for about 3-5 min each side

Optional Sides: But highly recommended ;)


Healthy Teriyaki Sauce


Ingredients:

  • 1/2 cup coconut aminos

  • 2 tbsp coconut sugar

  • 1 tsp cornstarch

  • 1/2 tsp garlic powder

  • 1/2 tsp ginger powder

  • 1/4 cup water

Directions:

  1. Place all ingridetns into saucepan

  2. Heat on medium heat for 5 minutes stirring occasionaly

  3. Reduce heat and coat for about 10 minutes until thickened

Sesame Slaw:


Ingredients:

  • 2 cups cabbage mix

  • ½ shredded carrots

  • 3 tbsp rice vinegar

  • 3 tbsp coconut aminos

  • 1 tbsp sesame oil +

  • ½ tbsp EBTB (everything but the bagel seasoning from Trader Joe’s)

  • ½ tsp garlic powder

Directions:

  1. Combine sauce

  2. Pour over cabbage and carrots

  3. Stir and let marinate

Watermelon Salad:


Ingredients:

  • 2 cups chopped watermleon

  • 1 jalapeno

  • ½ red diced red onion

  • 1 tbsp balsamic glaze (I used Trader Joe’s to save time, but feel free to make your own)

  • 1 tbsp chopped mint

Directions:

  1. Cut all fruit and veggies into small pieces

  2. Transfer to bowl

  3. Add in mint and glaze, stir and let marinate in fridge

Sweet Potato Fries:


Ingredients:

  • 3 medium sized sweet potatoes

  • 2 tbsp avocado oil (I use Chosen Foods)

  • 1 tsp Himalayan salt

  • 1 ½ tsp black pepper

  • 1 tsp smoked paprika

Directions:

  1. Preheat oven to 375 F

  2. Wash and prep sweet potatoes

  3. Cut into fry shapes. Get creative! Shoestring or steak fries!

  4. Coat in avocado oil and seasonings

  5. Lay out flat on parchment lined baking sheet

  6. Bake for 15 minutes flip and bake for another 15 minutes

These burger were the essence of summer time! I add a nice slice of thick grilled pineapple for extra sweetness and sliced avocado because I love avocado. Enjoy these poolside with a watermelon kombucha (maybe mixed with some vodka) in your hand, and we are set!
