Healthy Veggie Chow Mien | Gluten Free


Homemade healthy Chinese food you’ll wanna eat every night. This has to be one of the best dishes I have ever made and I can totally see myself making it over and over again.


Ingredients:

- 3 brown rice and millet ramen cakes

- 1 cup shredded Napa cabbage

- 3 carrot sticks

- 3 green onions

- 1 cup packed snow peas

- 1 package of beech mushrooms (I got mine from Whole Foods)

- 1 tbsp avocado oil, or oil of choice


Sauce:


- 1/2 cup coconut aminos

- 2 tsp sesame oil

- 4 tsp pure maple syrup

- 2 tsp rice vinegar

- 1 tsp ground ginger

- 1 tsp garlic powder

- 1 tsp red pepper flakes

- 1 tsp corn starch ⠀

⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Directions:


1. Heat 2 cups of water to boiling

2. Pour over ramen cakes

3. Use wooden spoon to break up noodles

4. Add oil to pan

5. Sauté shredded cabbage

6. Peel and ribbon the carrots

7. Slice snow peas diagonally

8. Cut off base from beech mushrooms and break apart

9. Slice green onion diagonally

10. Add in remaining veggies and cook for about 10 minutes to soften

11. Add sauce ingredients to small sauce pan

12. Bring to boil

13. Then reduce and let thicken

14. Add veggies to big bowl

15. Top with noodles

16. Add in half the sauce (you will have extra)

17. Use tongs to combine everything together

18. Top with everything bagel seasoning
