Lemon Chia Poppy Bread


Ingredients:

- 2 1/2 oat flour (I use this brand blended up)

- 1/2 cup coconut sugar

- 1/4 cup coconut oil, melted and cooled

- 1 flax egg (1 tbsp ground flax + 2.5 tbsp water)

- 3/4 cup almond milk

- 1/4 cup lemon juice

- 2 tbsp lemon juice

- 1 tbsp poppy seeds

- 2 tbsp chia seeds

- 2 tsp baking powder

- 1/4 tsp baking soda


Glaze:


- 1/4 cup coconut butter (I like this brand)

- 2 tbsp lemon juice


Directions:


1. Preheat oven to 350 F.

2. Create your flax egg and set sit for 5 minutes.

3. Combine flour, baking powder, baking soda, chia seeds, poppy seeds, and lemon zest together in a separate mixing bowl.

4. Add almond milk, coconut oil, coconut sugar, and lemon juice to flax egg. Combine until smooth.

5. Create a well in dry mixture, then pour into wet. Stir to combine.

6. Parchment line a loaf pan, then pour in batter.

7. Set in oven and bake for 45-50 minutes.

8. To make glaze, place coconut butter and lemon juice in a small saucepan.

9. Bring to low heat and stir constantly, until a thin glaze is formed.

10. Once bread in done cooking, remove and oven. Cool slightly then pull out of loaf pan.

11. Pour glaze on top and smooth over the entire loaf.

12. Slice up and enjoy!
