Simple Zoodle Ramen

Single serving
Ingredients:
Broth:
- 1 cup + 1 tbsp low sodium veggie broth
- 1/2 cup water
- 1 tsp sesame oil
- 1 tsp garlic powder
- 1/2 tsp ginger powder
- 1 tsp Trader Joe’s Mushroom & Co Umami seasoning (optional but I highly recommend you get your hands on this stuff)
- 1/2 tsp Himalayan salt
- 1/2 tsp pepper
- 1 tbsp green onion
Add ins:
- 1/2 zucchini, spiralized
- 1/2 avocado
- Baked sesame sriracha tofu **
- Organic crimini mushrooms
- Radish
- Green onion
Method:
1. Bring a pot to medium-high heat
2. Pour 1 tbsp veggie broth and all seasonings, including sesame oil. Heat for about 5 minutes for the flavors to develop. Pour in remaining ingredients and heat till warm.
3. Once warmed, add in zoodles. Let cook for 5 minutes.
4. Remove from heat and pour into bowl.
5. Top with your toppings.
6. I finished off with red pepper flakes and everything but the bagel seasoning!
**Baked Sesame Sriracha Tofu
Ingredients:
- 1 block organic extra firm tofu1 tbsp sriracha (or more)
- 1 tbsp coconut aminos
- 1/2 tbsp sesame oil
- 1 tsp garlic powder
- 1/2 tsp red pepper flakes
Directions:
1. Preheat oven to 375 F
2. Drain tofu and pat with some paper towels.
3. Cut into cubes
4. Place in bowl and toss with seasonings
5. Set evenly on a parchment lined baking sheet
6. Bake for 30-35 minutes, making sure to flip halfway
