Vegan Spiced Oatmeal Pecan Cookies

I remember has a kid I always hated oatmeal cookies. Whenever you would go to parties and there would be some sort of cookies platter, it was always the oatmeal raisin ones that were left. I wasn’t until maybe a couple years ago when I started to not despise them. My sister made chocolate chip oatmeal cookies and I was instantly hooked. I know it’s probably the most basic cookie you can have, but that chocolate change just did it for me. So now whenever I’m making oatmeal cookies I try to step outside the box and make different versions of just the standard cookie.

I think it took me about 3 times to finally get this recipe right. Every time I have wanted to make these cookies, I had always been missing an ingredient and I would improvise. Half of the time it worked, and the other times not so much. But that is just how life is, it takes a couple times to get something right.
For this recipe I sure did not hold back with the add ins. I seriously thought, “how can I possibly add so much goodness into one cookie?” And I believe I accomplished that. I threw in coconut flakes and pecans and a whole bunch of spices, then called it a day.



Since changing my lifestyle to veganism, I am now trying to make my favorite sweet
things into something healthier that I can enjoy now. Changing your lifestyle doesn’t mean you have to completely change your diet into something bland. I feel like I say it every blog post, but here we go again, you can still eat healthy and enjoy your favorite things! Use your brain, get creative, do research! Find a healthy alternative to unhealthy food and change up a recipe. Being healthy is easy, don’t let false statements sway your thinking.

Let’s just make these cookies!

Vegan and Gluten Free
Category: Dessert
Prep time: 10 minutes Cooking time: 8 minutes
Ingredients:
1 ½ cups rolled oats
½ cup coconut oil or vegan butter
1 cup chickpea flour, almond flour, or any other flour you like
½ cup pecans, finely chopped
½ cup unsweetened coconut flakes
⅓ cup pure maple syrup or coconut sugar
1 tsp vanilla extract
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
Instructions:
Preheat oven at 350 F and line a baking sheet with parchment paper
Place all dry ingredients into bowl and mix together until incorporated
Place vanilla, coconut oil/vegan butter, and maple syrup/coconut sugar into bowl and whip together. If using maple syrup and coconut oil, it will not cream together like normal butter and sugar. Don’t be alarmed once combined with dry ingredients it will work together.
Mix both dry and wet ingredients together until combined. Batter will be slightly crumbly, if not sticking together when forming into ball place in fridge for 20 minutes to firm up.
Form into evenly shaped balls place on parchment lined baking sheet and bake for 8 minutes
Once cooked, transfer to wire cooling rack
These are a healthy alternative to your standard oatmeal cookies so don’t expect a buttery cookie. They are warm and comforting, and you won’t feel bad for eating two or maybe three.
